Milton of Kilravock Pork

All of the Pigs processed by Millers of Speyside come from one farmer, Mr Cragie of Milton of Kilravock, Cawdor, in the Highlands of Scotland, with fresh supplies arriving weekly. Cawdor is a picturesque area, East of Inverness, and was the setting for William Shakespeare's 'MacBeth'.

The Pork produced here is finished to the very highest standards before arriving at Millers for expert preparation. Purchasing from a single supplier allows us to guarantee; absolute traceability, consistent high quality and knowledge of excellent farming and welfare practices.
Customers regularly comment on the conformation of the pork and believe the fat to meat ratio to be perfect. This is achieved through a special combination of specific pig breed attributes. The pigs at Milton of Kilravock are sired by pure bred 'Large Whites' this genetic influence gives the offspring a good conformation, the piglets are mothered by a cross-breed known as a 'Landroc' this is a combination of a 'Landrace' which means the sows are good mothers and a 'Duroc' which gives the meat its subtle sweet taste that is so popular with our customers. The combination of these three breeds also results in the higher meat to fat ratio found in Mr Craigie's Pork.

Kilravock pigs are born outside in pig arcs on grassland; they are left to farrow in peace and solitude without the intrusion of modern farrowing crates. The Craigie's run their farm on an entirely straw based system and feed their animals with home grown feeding barley, with the pigs spending the majority of their lives out of doors but with continual access to shelter.

The business is a family run affair; it is the wealth of experience, degree of importance assigned to the welfare of their animals and close attention to detail, which makes the Kilravock Pork so special.
